This amazing veggie soup is so nutritious, hearty, easy on sensitive stomachs and easy to make! The fresh greens and avocado really make this soup super delicious, creamy and fulfilling.
Ingredients:
1 medium onion, diced
7 golden potatoes, cubed
2 large carrots, chopped
2 cloves of garlic, minced
1 cup fresh English peas
1 quart vegetable broth
1/2 cup sliced spinach (per bowl)
1/2 cubed avocado (per bowl)
Sea Salt to taste
Directions:
Saute the onion in 1/2 teaspoon of olive oil plus 3 tablespoons of water (or just 1/4 cup of water, if you need to cook without oil) until translucent. Add in broth, water, potatoes, carrots and garlic. Cook over medium-high heat until carrots and potatoes are tender, about 30 minutes. Add in peas and let cook for another 10 minutes. Serve warm. Top with sliced spinach and avocado and sea salt.
