Rosemary Vegan Mac ‘n Trees
Ingredients:
1 package gluten-free pasta
2 cups broccoli (chopped)
1 cup of raw cashews
3 fresh dates (pitted)
1-2 cloves garlic (minced)
1 tablespoon fresh lemon juice
1/2 teaspoon fresh rosemary (minced)
1 - 1.5 cups of water
Sea salt to taste
Prepare pasta according to directions on package. Add broccoli to boiling pasta for the last two minutes of pasta’s cook time. Drain.
To prepare sauce: add cashews, dates, garlic, lemon juice, fresh rosemary, sea salt and water to a blender or small food processor. Blend until smooth. May add more water as needed to thin the sauce. Pour sauce over noodles and broccoli. Stir well. Garnish with a fresh sprig of rosemary.
