Black Bean and Olive Dip
Super easy, delicious, savory and filling. Great with raw veggies, gluten free crackers, on salads or in a burrito.
Black beans are high in protein, fiber and minerals such as calcium, magnesium, manganese, copper and zinc) which means healthy bones, and strong immune, endocrine and neurological systems, to name a few of their benefits.
1 can black beans, rinsed
1/2 or 1 can green or black olives, rinsed (depending on how much you love olives)
2 green onions, sliced
1 cup of cilantro
1 or 2 cloves of fresh garlic
May also add 1/4 tsp cumin and a little black pepper, if desired
2 tablespoon water (for consistency)
Blend all ingredients in a food processor, blender or magic bullet until smooth. Enjoy!
