Quinoa Tabbouleh

Ingredients:   1 cup quinoa (rinsed and cooked in 1 and ¾ c water for 15 minutes) ½ diced red onion (depending on how onion-y you like it) 3 sliced green onions 4 cup diced tomatoes (any kind) 1 bunch fresh parsley (finely chopped) 3 tablespoons fresh basil (finely chopped) 2 tablespoons fresh mint (finely chopped)  Combine all ingredients in a big bowl. Prepare dressing.  Dressing:  Juice from 5-6 lemons 3-4 cloves of garlic 1 tablespoon olive oil Sea salt Pepper  Combine all dressing ingredients in a food processor, magic bullet or blender and blend until smooth.  Pour dressing over quinoa mixture. Serve topped with sliced avocado.
